I got fresh baby corn in the market.it was so fresh that I thought of making something healthy...not the regular deepfried baby corn crispies , or baby corn manchurian. Corn is sweet so something spicy gravy will be taste enhancer.,,, and added greens which matches with yellow. Along with baby corn I have added fresh corn kernels and french beans.for green gravy , blanched spinach, coriander and pudeena.which is very healthy.

Hariyali Baby Corn recipe - How to make Hariyali Baby Corn

Preparation Time:    Cooking Time:    Total Time:     4Makes 3 to 4 servings

Ingredients
3/4 cup corn roundels
1/4 cup sweet corn kernels (makai ke dane)
1 cup french beans , cut into 1 inch pieces
a pinch of turmeric powder (haldi)
1 tbsp oil
1 tbsp butter or 1 tbsp oil
salt to taste
1 cup water

To Be Ground To A Mixture In A Mixer (without Using Any Water)
1 tbsp chopped coriander (dhania)
1 tbsp chopped mint leaves (phudina)
1 small bunch blanched spinach (palak)
3 to 4 green chillies
1/2 inch piece ginger (adrak)
1 tsp cumin seeds (jeera)
5-6 almond (badam) , soaked in warm for 15 minutes
1 onion , sliced
2 tomatoes , sliced
2 garlic (lehsun) cloves
Method
    Method
  1. Heat butter in a non-stick pan, add the French beans, baby corn and sweet corn and cook on a medium flame for 5 minutes, while stirring in between.
  2. Add salt and sugar, cover with a lid filled with water and allow it to cook further, while stirring in between.
  3. When the vegetables are cooked, add the ground mixture and mix well and saute for 5 minutes or till the raw smell has gone.
  4. Add water and cook for another 5 minutes on a medium flame.
  5. Serve hot with rotis, phulkas , naan, or kulchas.
