Guthi vankay is a well known and delicious curry prepared in Andhra households. The brinjals are slit and stuffed with a black dal and spice mix and then cooked on slow fire in a delicious curry. Serve the vegetable dish with rice or appam.

2 medium sized brinjals
2 tablespoons corriander seeds
10 tablespoons black gram
Dried red chiliies
salt to taste oil for cooking
Cooking procedure:- Slit the brinjals with their stalks, by 3/4 without cutting them completely,into 4.
- The stuffing will be inserted in the gap formed by slitting the brinjal.
- Heat oil in a kadai and place the brinjals in the oil.
