Grilled Mango and Corn Salsa recipe - How to make Grilled Mango and Corn Salsa


Preparation Time:    Cooking Time:    Total Time:     4Makes 4 serving

2 mangoes , peeled and sliced
2 corn (makai ke dane) cobs
1/4 cup olive oil
1 tbsp chili powder
1 tsp salt
1 tbsp lemon juice
2 cups diced tomatoes
1/2 cup canned black beans
3/4 cup diced red onions
1/3 cup chopped coriander (dhania)
  1. Prepare grill for medium-high heat cooking.
  2. Mix olive oil with chili powder, salt and lime juice.
  3. Rub on mango and corn and grill mango slices and corn over medium-high heat for 5-8 minutes turning several times until all sides are lightly grilled.
  4. Dice the mango into small cubes.
  5. Cut kernels from each cob.
  6. Mix both together and combine with tomatoes, beans (rinsed), onion and coriander and toss well.
  7. Refrigerate until served.
