Strawberry juice is the fruit juice from strawberries. It is rich with Vitamin C and ranges from sweet to sweet tart in taste. Ellagic acid is a compound which has been shown to prevent carcinogens from turning healthy cells into cancerous ones. Strawberry juice can be a little on thick side and so you will need to dilute it with another juice or water.
How to select
The fruits to be used for juicing are often picked before they are fully ripe to extend their shelf life. This can leave the strawberry over firm and lacking full flavour. Avoid strawberries that are soft or shrivelled as this signifies they are past their prime. Packaged juice cans and tetra paks should be checked for best before date and traces of leakages and bulging.

How to store

The freshly prepared strawberry juice should be consuming shortly after extraction or within a day of refrigeration.
