Like plain soymilk, flavoured soy milk is a beverage made from soybeans. A stable emulsion of oil, water and protein, it is produced by soaking dry soybeans and grinding them with water. Flavoured soy milk also contains about the same proportion of protein as cow's milk: around 3.5%. Flavoured soy milk is easily available in the market and can also be made at home with traditional kitchen tools or with a soy milk machine. Flavoured soy milk is commonly available in vanilla and chocolate flavours, while other flavours like cardamom, masala, almond and saffron are also available.

Vanilla-flavoured Soy Milk
Vanilla-flavoured soy milk is flavoured with the subtle taste of vanilla, which makes it even more delicious. Vanilla essence or vanilla extract is added to the milk at the time of processing and then stored like normal soy milk. It might contain little extra sugar to add to the sweetness. Vanilla soy milk can be easily made at home by adding some vanilla essence and sugar to the milk and using as required. This milk is commonly used in milk shakes and smoothies, and can also be consumed as it is.
Chocolate-flavoured Soy Milk
Chocolate -flavoured soy milk is flavoured with the delicious sweet taste of cocoa. Cocoa powder is generally added to the milk at the time of processing and then stored like normal soy milk. It might also contain a little extra sugar to add to the sweetness. Chocolate flavoured soy milk can be consumed as it is or added to certain milkshakes,smoothiesor other desserts.
Other flavours of soy milk easily available in the market these days are cardamom (elaichi), saffron, almond and masala. These flavoured milks taste delicious even when consumed as it is, or these can be used in various chilled beverage or dessert recipes.
How to select
Soy milk is most commonly found in aseptic cartons. Most of the flavoured soy milk available in the market is fortified with extra calcium or vitamins. Read the instructions and best-before date prior to buying soy milk. While buying soy beans to prepare milk at home, make sure that the beans are whole and not cracked or green in colour.
Flavoured soy milk is part of a traditional Chinese breakfast, served either hot or cold, usually accompanied by breads like steamed roll.
Flavoured soy milk is also used to make chilled beverages like milkshakes, smoothies etc.
It can also be used to make different kinds of dessert like ice-creams and mithais.
How to store
Unopened soymilk bottles or Tetra Pak can be stored at room temperature. After opening, store the milk in the fridge and consume within a day.
Flavoured soy milk is nutritionally close to cow's milk. It naturally has about the same amount of protein (though not the same amino acid profile) as cow's milk. Most of the flavoured soy milk is hence fortified with calcium.
Unlike cow's milk, it has little or no cholesterol.
Flavoured soy milk also contains sucrose as the basic disaccharide, which breaks down into glucose and fructose. Since soy doesn't contain galactose, a product of lactose breakdown, soy-based infant formulas can safely replace breast milk in children with lactose intolerance.
