A pastry brush is a kitchen tool for brushing or glazing pastries or even tawas. A typical pastry brush has a wooden or plastic handle with natural or synthetic bristles.
Many pastries need to be glazed or brushed with ingredients like egg whites, melted butter or milk. A pastry brush controls the amount of glaze which is applied, and ensures that it is spread evenly and efficiently. Keeping a pastry brush or two around is very useful, even if you do not do that much baking, because there are a number of other good uses for a pastry brush.
How to Select
Choose the type and size of brush according to your requirement.
• In baking breads and pastries, a pastry brush is used to spread a glaze or egg wash on the crust or surface of the food
• In roasting meats, a pastry brush may be used to sop up juices or drippings from under the pan and spread them on the surface of the meat to crisp the skin.
• They may be used to grease dosas or rotis with oil or ghee while roasting them.
How to Store
The pastry brush should be carefully hand-washed after each use, and periodically dipped in a bleach solution to keep it clean and nice.
To hand wash a pastry brush, massage detergent gently into the bristles and then rinse them thoroughly.Then, shake out the brush and hang it to dry so that the bristles do not deform.
Ensure that the brush is dry before storing.
