These scrumptious bhajiyas are made in a unique way by batter-coating and frying potato slices sandwiched with garlic chutney. This gives you an ideal combination of crunch and finger-licking flavour in one handy snack.

Ingredients

28 boiled potato slices
14 tsp garlic chutney

To Be Mixed Into A Smooth Thick Batter (using Approx. 3/4 Cup Of Water)
1 1/4 cups besan (bengal gram flour)
1/4 tsp carom seeds (ajwain)
1/4 tsp turmeric powder (haldi)
1/2 tsp chilli powder
1/4 tsp asafoetida (hing)
a pinch of baking soda
salt to taste

For Serving
sweet chutney

Method
  1. Apply 1 tsp of garlic chutney on one slice of a potato and cover it with another potato slice to make 1 potato sandwich and keep aside.
  2. Repeat step 1 to make 13 more potato sandwiches.
  3. Heat the oil in a deep non-stick pan, dip each potato sandwich in the batter and deep-fry a few at a time, till they turn golden brown in colour from all the sides. Drain on an absorbent paper.
  4. Serve immediately with sweet chutney.
