Fluffy rice balls is a steamed rice paste based dumplings. The soaked rice is ground and then cooked with seasonings like chilli powder, curry patta , mustard seeds and grated coconut. The balls made of this rice-spice mix is then steamed in a steamer and served hot as fluffy rice balls with chutney.
- Soak the rice in water. after 2 hours grind it into paste(it should be coarse, little less than a fine paste).
- Add salt. keep aside.
- In a kadai, heat oil. allow mustard seeds to splutter. as soon as it stops spluttering, add curry leaves, red and green chilli. now add the above rice paste & keep mixing. it will come out like a thick rice paste pulp. add the grated coconut & stir for 2-3 minutes more. take off the kadai from the gas. make medium-sized balls from it.
- Steam these rice balls in a steamer or cooker for 10 minutes.
- serve hot with green coriander chutney.
