A simple egoless curd cake recipe for vegetarians. The curd is mixed with sugar, flour and oil and then baked to create a spongy and soft egoless curd cake.

1 3/4 cups plain flour (maida)
1 cup sugar
3/4 cup oil
1 cup curds (dahi)
Meetha Soda - 1tsp levelled
8 tsp cocoa powder
1/2 tsp coffee (optional)
1 tsp vanilla essence
1 tsp milk
For icing
2 1/2 tsp cocoa powder
4 tsp icing sugar
3 to 4 tsp water
3 drops vanilla essence
For decoration
1/2 cup walnuts (akhrot)
1/2 cup cherries

  1. Add oil, sugar, curd in a bowl and mix them in one direction using a spatula to form a thick mixture.
  2. Sieve flour,soda,cocoa powder and coffee.
  3. Add sifted mixture to the above curd mixture.
  4. Mix in one direction.
  5. Add vanilla essence and milk and again mix.
  6. Pour mixture in baking dish or borosil dish.
  7. Level it properly by keeping a towel underbowl.
  8. Microwave for 7-8 min.
  9. Check with the help of knife.
  10. Icing mixture-add cocoa powder, essence,icing sugar and water and make a smooth paste.
  11. Spread icing mixture on the cake.
  12. Garnish with walnuts and cherries and grated chocolate.
  13. Cool it under fan and can be stored in air tight container in the fridge for few days.
