Dudhi delight is a delightful vegetable soup recipe comprising of dudhi or bottle gourd. The dudhi is cooked with onion, garlic and potatoes and then blended with cream and served hot garnished with celery leaves.

400 gms chopped bottle gourd (doodhi / lauki)
1 medium sized potato
2 bayleaves
2 sticks of cinnamon (dalchini)
1 tsp peppercorns (kalimirch)
2 tbsp chopped onions
4 to 6 garlic (lehsun) cloves
1 1/2 cups white sauce
1/2 cup fresh cream
chopped celery to garnish
chopped parsley to garnish
salt to taste
2 tsp sugar or as required
  1. Combine the bottle gourd, onions, garlic, bayleaves, peppercorns and potatoes, add 1 cup of water and pressure cook for 3 whistles.
  2. Remove, cool and blend in a mixer till smooth.
  3. Add the white sauce ,1 cup of water, sait and sugar and mix well.
  4. Give it a one boil.
  5. Serve hot garnished with celery, parley and cream.
