Two questions..instead of mashed potatoes, could one use mashed cauliflower? Also, instead of deep frying, can one bake the vadas in an oven?

Tarla Dalal    We would not recommend the use of cauliflower. Instead of an oven, we would suggest a tava or an appe mould greased well with oil. In case of tava, flatten it well and in an appe mould make round balls.

My vada always breaks while frying, how to avoid this as splashes hot oils when it breaks.
