4 tbsp gelatine
2 cucumbers 1 grated and 1 sliced
4 tbsp lemon juice
1 onion ,finely chopped
100 gms crumbled paneer (cottage cheese)
1 tbsp chopped coriander (dhania)
green colour
2 to 3 tbsp mayonnaise
1 cup low fat curds (dahi) and 1 teaspoon of powdered sugar
salt and pepper to taste

  1. Soak half the gelatin in water to soften, the dissolve it on a double boiler, cool & add 2 tbsp lemon juice, few drops of green colour, powdered sugar, salt & pepper to taste.
  2. Pour into a lightly oiled & chilled mould.
  3. When semi set arrange cucumber slices decoratively.
  4. Cover the mould & chill until firm.
  5. Soak the remaining gelatin & dissolve it the same way as earlier, cool.
  6. Add 2 tbsp lemon juice, crumbled paneer, mayonnaise, minced onion, coriander chopped, cucumber grated & a few drops of green colour,
  7. Finally fold in beaten yoghurt.
  8. Pour this over the already set first layer & chill until firm.
  9. Unmould it on a bed of crisp lettuce, decorate with mint leaves.
