Cheese-based tidbits do not have to be store bought. Here is how you can make crispy cheese straws at home to amaze the kids at home. While it might take a little practice to master this, it is not so difficult if you follow the instructions to the t. What is more, it does not even call for any exotic ingredients – just simple stuff readily available in your larder, a bit of love, and an element of surprise!

Ingredients
4 tbsp grated processed cheese
1 cup plain flour (maida)
2 pinches of salt
1/4 cup butter (room temperature)
1/4 tsp chilli powder

    Method
  1. Sieve the flour and add the salt.
  2. Rub the butter into the flour with finger tips till the mixture resembles bread crumbs.
  3. Add the cheese and chilli powder and mix well.
  4. Add ice-cold water (approx. 1 tablespoon) and make a dough.
  5. Roll out the dough on a lightly floured board to 6 mm. (1/4") thickness.
  6. Cut into long strips with a fluted cutter and give 2 twists.
  7. Arrange the straws on an ungreased baking dish and bake in a pre-heated oven at 200°c (400°f) for 15 minutes.
  8. Serve immediately or store in an air-tight container.

What are cheese straws made of?

  1. Cheese straws are made of 4 tbsp grated processed cheese, 1 cup plain flour (maida), 2 pinches of salt, 1/4 cup butter (room temperature), 1/4 tsp chilli powder and plain flour (maida) for rolling.

Tips for cheese straws

  1. Sieving plain flour is extremely necessary to make it free of lumps. 
  2. Butter has to be at room temperature, so remember to remove it from the refrigerator at least half an hour in advance.
     
  3. For rolling use a big board or a plain surface and spread enough plain flour on it so rolling is easier. 
     
  4. Ice cold water is a must to make the cheese straws flaky.
     
  5. A fluted cutter is best to give a perfect shape. But if you don’t have it, use any other cutter.
     
  6. While arranging the cheese straws on the baking tray. Keep enough distance between the straws so they do not stick to each other.
     
  7. Cool the cheese straws well before storing, as warmth may make them soggy.

How to select plain flour, maida

  1. Maida is available in various pack sizes from various brands. Choose the pack size that suits your needs. 

     
  2. Buy well-packed flour, pure white in colour, and smooth and powdery in texture. 
     
  3. The plain flour should be uniform in colour. 
     
  4. Avoid pale yellow-coloured flour. 
     
  5. It should also be free of worms and debris. 
     
  6. Also make sure that there is no evidence of moisture or lumps formation.
     
  7. Flour is sometimes labelled as pre-sifted. This means that the flour was sifted before packaging but it compacts during shipping and handling and therefore is no longer sifted by the time you get it home. So, always sift again before use.

How to select processed cheese

  1. Processed cheese is sometimes sold in blocks, and quite often sold packed in individual cubes, sometimes with plastic wrappers or wax paper separating them. 
  2. Processed cheese should not be too crumbly or dry with the colour being relatively uniform.
     
  3. Check the expiry date and look out for any discoloration or moldy spots.

  4. Give 2 to 3 twists to each straw.

I didn't know cheese straws can be cooked in just 15 minutes at home. But believe me you get nice crispy straws..just follow the recipe to the T.

I always bought readymade cheese straws that were expensive and not that fresh...so now that i tried this recipe i always make it at home and my family enjoys them with soups....
