For The Dough
2 cups whole wheat flour (gehun ka atta)
3 tbsp oil
salt to taste

For The Stuffing
1 cup chana dal (split bengal gram) , cooked and mashed
1/2 cup soya granules
1/4 cup crushed green chillies
2 tbsp oil
1/2 cup chopped coriander (dhania)
1/2 cup finely chopped spring onion greens
salt to taste
butter for serving

For dough

    For dough
  1. Combine all the ingredients in a bowl, mix well and knead into a soft dough, using enough water.
  2. Divide the dough into 4 equal portions and keep aside.

For the stuffing

  1. Soak the soya granules in enough hot water for about 20 minutes. Strain and squeeze the excess water. Keep aside.
  2. Heat the oil in a pan, add the onions and saute till they turn soft or translucent.
  3. Add the green chillies and saute for more 1/2 minute.
  4. Add the chana dal and cook for a minute.
  5. Add the soy granules, mix well and saute for a minute.
  6. Add the salt and coriander, mix well.
  7. Remove from the flame and cool completely.
  8. Divide the stuffing into 8 equal portions and keep aside.

How to proceed

  1. Roll out a portion of the dough into a circle of 4” diameter.
  2. Place a portion of the stuffing at the centre and bring the edges together at the centre to seal tightly.
  3. Roll out again into a circle of 6” diameter, using little whole wheat flour.
  4. Heat a tava and cook the paratha, using little oil, till golden brown spots appear on both the sides.
  5. Repeat the same to make more 7 parathas, using the remaining dough ad stuffing.
  6. Serve hot.
