Carrot halwa or gajar ka halwa is a north indian sweet dish prepared from grated gajar(or carrots) cooked with sugar, ghee and spices like cardamom. A delicious dessert dish which can be served as a snack or after meal sweet! gajar ka halwa is a favorite dessert served i north india during winters garnished with chopped nuts.

Ingredients
500 gms grated carrot
3 cups milk
2 tbsp ghee
1 cup sugar
15 to 20 sliced almonds (badam)
1 tsp cardamom (elaichi) powder
Method
    Method
  1. Heat the ghee in a deep pan, add the carrots and saute on a medium flame for 8 to 10 minutes or till the carrots turn soft.
  2. Add the milk and cardamom powder, mix well and bring it to a boil.
  3. Reduce the flame and cook till the milk is almost reduced.
  4. Add the sugar, mix well and cook till the mixture becomes dry. Serve hot garnished with almonds.
