2 cups brinjals , cut into long strips
1 1/2 cups bok choy
1 tbsp cornflour
1 tsp oil
1 cup onion cubes
1 tsp chopped garlic (lehsun)
salt to taste

To Be Mixed Into A Sauce
1 1/2 tbsp black bean sauce
1 tsp sugar
1 tsp cornflour
1/4 cup of water

Other Ingredients
oil for deep-frying
  1. Sprinkle the brinjal strips with a little salt and cornflour and deep-fry them in hot oil till they crisp and golden brown in colour. Drain on an absorbent paper and keep aside.
  2. Heat the oil in a broad non-stick pan, add the onions and garlic and sauté on a medium flame for 2 minutes.
  3. Add the bok choy and salt sauté on a medium flame for 2 minutes.
  4. Add the brinjal, prepared sauce, ¼ cup of water, mix well and cook on a medium flame for 2 minutes, while stirring continuously.
  5. Serve immediately.

Brinjal and bok choy stir fry.. is really very nice recipe.. as the black bean sauce gives a nice flavour and taste to the vegetables...
