Boondi laddo with jaggery is a tempting laddo recipe prepared from boondi mixed with jaggery. The boondi is prepared from the gram flour and rice flour batter and then cooked with jaggery.

Boondi Laddu with Jaggery recipe - How to make Boondi Laddu with Jaggery

Preparation Time:    Cooking Time:    Total Time:     Makes 8 laddoos

2 cups besan (bengal gram flour)
2 cups grated jaggery (gur)
6 pods of cardamoms , peeled
1 cup rice flour (chawal ka atta)
2 tsp ghee
6 cashewnuts (kaju) , broken , fried
oil for frying
  1. Combine the rice flour and besan and sieve together. Keep aside.
  2. In a deep pan, boil 1 cup of water and add the jaggery. Cook till the jaggery is dissolved and a 2 thread consistency syrup of formed.
  3. Add the ghee and cardamom and mix well. Keep aside.
  4. Prepare boondis from the besan mixture using boondi special ladle.
  5. Prepare boondi with whole batter and add them to the jaggery syrup.
  6. Add the cashewnuts and mix well.
  7. Divide the mixture into equal round laddoos.
  8. Store them in a airtight container or serve immediately.
