A spicy bitter gourd or karela vegetable preparation, bitter gourd curry is a typical South Indian recipe. The bitter gourd is easy to prepare and quite healthy, especially for diabetics.

  1. 1. cut bitter gourd into 2 halves. remove seeds from the center of gourd. then shred it in a chopper. transfer shredded bitter gourd in one bowl. add salt and plenty of water. allow it to soak for 5-10 mins.
  2. 2. by the time heat pan. add some oil, mustard seeds, asafoetida., ground nuts, chick peas, dry red chillies, raisins, ginger paste. stir well.
  3. 3. remove all water from bitter gourd. strain it with a strainer. add that to the oil. mix well and add remaining ingredients except sugar. mix well. allow it to cook.
  4. 4. switch off the flame once curry is cooked well. finally add sugar and stir.
