Ingredients
4 whole wheat (gehun) burger buns
4 grilled paneer slices
a few chopped spinach (palak) leaves
salt and freshly ground black pepper powder to taste
1/4 tsp nutmeg (jaiphal) powder
4 grilled pineapple slices
4 tsp mustard (rai / sarson) paste

For The Barbecue Cutlets
4 medium raw bananas , cooked and mashed
1/4 cup finely chopped onions
1/2 cup roasted and chopped capsicum
1/2 cup roasted sweet corn kernels (makai ke dane) , crushed
1 tbsp finely chopped garlic (lehsun)
1 tsp carom seeds (ajwain)
1 tsp chilli powder
salt to taste
2 tsp dried fenugreek leaves (kasuri methi)
2 tsp chole masala
1 tbsp ghee
2 tsp cumin seeds (jeera)
2 tbsp besan (bengal gram flour)

To Garnish
roasted sesame seeds (til)
tooth picks

To Serve
fruits flambe with ice cream
Method

  1. Heat the ghee in a pan and add the cumin seeds.
  2. When the seeds crackle, add the onions, garlic, capsicum and sweet corn and saute for 3 minutes.
  3. Add all the remaining ingredients, mix well and saute for 1/2 a minute.
  4. Add the banana, salt and flour, mix well, remove form the flame and keep aside to cool.
  5. Divide the mixture into 4 portions and shape them into round flat cutlets.
  6. Heat the ghee in a pan and roast each cutlet til they turn golden brown and crisp from all the sides.
  7. Keep aside.

  1. Apply butter and toast the base part of burger bun.
  2. Place it on a clean dry surface, apply mustard paste.
  3. Place spinach leaves, grilled panneer and pineapple slices. Place barbecue tikki on it.
  4. Top it with cheese slice salt, pepper and nutmeg powder and few spinach leaves again.
  5. Apply butter to the burger covering bun on both sides. Sprinkle till on the top and roast lightly on both the sides.
  6. Cover the burger and secure it well with a long tooth pick. Slide some basil leaves and cherry tomatoes into the tooth pick as a garnish.
  7. Serve it with fruits flambe with ice cream.
