1 cup rice (chawal)
250 gms brinjal (baingan / eggplant) cubes , cut into 1" piece
1/4 cup ghee
4 cloves (laung / lavang)
1 " piece of cinnamon (dalchini)
3 onions , chopped
salt to taste
2 tsp garam masala powder
1 tbsp tamarind (imli) pulp
1 tbsp grated coconut
2 tbsp coriander (dhania) leaves


  1. Soak the rice in water for half an hour. drain.
  2. Heat half the ghee in a pan. add cinnamon and few cloves. sauté.
  3. Heat another pan, add the remaining ghee. add chopped onions and fry till golden brown.
  4. Add rice to the first pan and stir for a few minutes. add water and salt. stir.
  5. Once the onions are golden brown, add brinjal cubes. add salt and sauté on high heat till the brinjal becomes slightly brown.
  6. Add garam masala power and tamarind pulp to the onion and brinjals.
  7. Add this to the rice. mix well. cover and let it cook on low heat till the rice is almost done.
  8. Add freshly scraped coconut and chopped coriander leaves.
  9. Cover and cook on low heat till rice is cooked and serve hot.
