“CHAAT” is favourite of All. “ANOKHI BAJRA CHAAT” is an healthly option to Chaat. It is quick and easy to prepare. I am sure all will enjoy it.

Anokhi Bajra Chaat recipe - How to make Anokhi Bajra Chaat

Preparation Time:    Cooking Time:    Total Time:     4Makes 4 servings


For The Bajra Rasa
1 cup bajra (black millet)
1 cup tomato puree
1/2 tsp cumin seeds (jeera)
1/2 tsp black salt (sanchal)
1/4 tsp turmeric powder (haldi)
1/4 tsp coriander-cumin seeds (dhania-jeera) powder
1 tsp chilli powder
1/2 tsp chaat masala
1/2 tbsp chopped mint leaves (phudina)
1 tbsp oil
1/2 tsp lemon juice
salt and freshly ground black pepper (kalimirch) to taste

For The Potatoes
2 to 3 parboiled potato cubes
1 parboiled sweet potato (shakarkand) , cut into cubes
2 tbsp oil
1/2 tsp ginger-green chilli paste
1/2 tsp chaat masala
1/4 tsp turmeric powder (haldi)
1/2 tsp chilli powder
salt and freshly ground black pepper (kalimirch) to taste

To Serve
chopped onion
a few papadis
meethi chutney to taste
red garlic (lehsun) chutney to taste
green chutney to taste
nylon sev
chopped coriander (dhania)

For the bajra rasa

  1. Soak the whole bajra in enough water in a deep vessel for 8 to 10 hours or over night.
  2. Drain well.
  3. Add enough water, salt to taste to bajra and pressure cook for 5-6 whistles.
  4. Heat oil in a pan, add the cumin seeds.
  5. When the seeds crackle, add the tomato puree, dry masala powders, pepper powder and cook stirring continuously for 3-4 minutes.
  6. Add boiled bajra with the liquid (water in which bajra was cooked), salt to taste, more water if required to make a good thick Rasa, mint and cook for 5 minutes. Keep aside hot.

  1. Heat 2 tablespoon oil in a flat non stick pan , add pieces of potatoes-sweet potatoand sauté a little.
  2. Cover and cook till golden, stir in between. Add all the rest of ingredients for Potato Layer and mix well.

To serve

    To serve
  1. Arrange Potato Mixture in a deep serving plate, put enough hot Bajra Rasa on it.
  2. Top with imli chutney, red garlic chutney, green chutney, onion, sprinkle red chilli powder-jeera powder-chaat masala powder and salt. Garnish with nylon sev and coriander.
  3. Arrange 2-4 papadis on side and serve immediately.
