Achari Pumpkin Paratha recipe - How to make Achari Pumpkin Paratha

For Stuffing
2 cups grated pumpkin
1 cup finely chopped spring onions
1/2 cup finely chopped capsicum
2 medium sized potatoes , boiled and mashed
2 tsp oil
1 tsp finely chopped garlic (lehsun)
1 tbsp ginger-garlic (adrak-lehsun) paste
1/2 tbsp readymade pickle masala
1 tsp lemon juice
salt to taste
1/2 tsp garam masala
1/4 tsp sugar
3 tbsp finely chopped coriander (dhania)
2 tbsp finely chopped mint leaves (phudina)
a pinch of asafoetida (hing)

For The Dough
2 cups wheat (gehun) flour
2 tbsp oil
salt to taste
oil to cooking
For the Stuffing

    For the Stuffing
  1. Heat the oil in a pan,add asafoetida,garlic-ginger-chilli paste. Saute for few seconds.
  2. Add capsicum and spring onion. Saute for 5 minutes.
  3. Add Pumpkin and saute till it is cooked.
  4. Add salt, garam masala, pickle masala, sugar to it. Mix well.
  5. Turn off the gas. Add mashed potato, lemon juice, coriander leaves, mint leaves mix well. Keep aside.

  1. Combine together wheat flour, salt and oil and make a dough for paratha.
  2. Make equal size balls out of it and roll each put the stuffing and roll it again to make stuff paratha.
  3. On a tava, apply little oil for greasing and put the rolled paratha to roast. Turn it another side and use oil to roast it both sides.

For the serving

  1. Serve hot paratha with sweet tomato chutney or amla murabba or sweet mango pickle or sweet curd.
