As the name suggests these are very ‘Yummy” Pakodas.Sprouted moong coating on brinjal slices adds an extra taste to the dish instead of regular besan batter. Once prepared will always asked for again and again.

To Be Blended Into A Smooth Batter
2 cups sprouted moong (whole green gram)
1/4 cup curds (dahi)
1 tbsp ginger-green chilli paste
1/2 tsp carom seeds (ajwain)
1 tsp fennel seeds (saunf)
1/2 tsp turmeric powder (haldi)
1 tsp chilli powder
2 tbsp sesame seeds (til)
1/4 tsp baking soda
2 tsp oil
2 tbsp chopped coriander (dhania)
salt to taste

Other Ingredients
2 long brinjal (baingan / eggplant)
oil to deep fry
chilli powder to taste
salt to taste
chaat masala to taste
  1. Cut brinjal into 1/8 inch thick slices.
  2. Sprinkle red chilli powder and salt. Keep aside.
  3. Grind sprouted moong, curds, ginger-chillies to a paste. Add rest of all ingredients for batter and enough water to prepare a thick coatable batter.
  4. Dip the brinjal slices in batter and coat well.
  5. Deep fry in hot oil till pinkish.
  6. Sprinkle chaat masala powder and serve hot with coconut chutney and a cup of hot tea.
