Vegetables In Yellow Curry

A south indian delicacy where vegetables are made in yellow curry with a light flavour of coconut milk.
- Combine the tomato puree and coconut milk in a deep pan, mix well and cook till the milk is cooked.
- Add the curry powder, turmeric powder, sugar, pepper powder and salt, mix well and cook for more 4 minutes.
- Add the remaining ingredients, mix well and cook till the vegetables are completely cooked.
- Serve hot garnished with pineapple.
