Vegetable and Coconut Milk Soup recipe - How to make Vegetable and Coconut Milk Soup

Ingredients
1/2 tsp oil
2 cups coconut milk
3 tbsp tomato puree
1 tsp garlic (lehsun) paste
1/4 cup chopped mixed vegetables (carrot , french beans , capsicum , corn)
1 tbsp chopped mint leaves (phudina) leaves
salt to taste
1 tsp freshly ground black pepper powder
1 tsp quick cooking rolled oats
chopped coriander (dhania) for garnishing
Method
    Method
  1. Heat oil in a pan, add garlic paste and saute for a minute
  2. Add the vegetables, mix well and cook for 3 to 4 minutes.
  3. Add the tomato puree and mint leaves, mix well and saute for a minute.
  4. Add the oats and coconut milk, salt and pepper, mix well and cook for 2 minutes.
  5. Serve hot garnished with coriander.
