Vegetable Seviya recipe - How to make Vegetable Seviya

500 gms vermicelli (seviyan)
1 1/2 tbsp oil
salt to taste
1 tsp mustard seeds ( rai / sarson)
1 tsp cumin seeds (jeera)
2 tsp chopped green chillies
1 cup mixed boiled vegetables (french beans , carrot ,
capsicum , etc)
1 tsp chilli powder
1 tsp coriander (dhania) powder
1 tsp freshly ground black pepper powder
2 tbsp tomato puree
lemon juice , according to your taste
1 tbsp chopped coriander (dhania)
  1. Boil enough of water in a deep pan, add little salt and 2 tsp oil and mix well.
  2. Remove from the flame and add the vermicelli close the pan with the lid for 5 minutes, as it should not be raw or not over cooked.
  3. Remove the lid and drain of the excess hot water, add the cold water and again drain the excess water and keep aside.
  4. Heat the remaining oil in a non-stick pan or kadhai, add the mustard seeds.
  5. When the seeds crackle add the cumin seeds and onions, mix well and cook till the onions turn to brown in colour.
  6. Add the green chillies, boiled vegetable, all dry masala and salt mix well and cook on medium flame for 2 minutes.
  7. Add the tomato puree and boiled vermicelli, mix well and cook on medium flame for 2 minutes.
  8. Add the lemon juice and coriander and mix well, cook more for a minute.
  9. Serve hot.
