Vegetable Enchiladas recipe - How to make Vegetable Enchiladas

Preparation Time:    Cooking Time:    Total Time:     Makes 4 serving

4 corn tortillas (chapattis)
2 large potatoes (boiled and mashed )
1 cup mixed chopped vegetables cooked and chopped (beans , carrots , capsicum , cauliflower and green peas , boiled corn kernels )
1/4 cup boiled rajma (kidney beans) ,
1 cup salsa
2 tbsp processed cheese
2 tbsp mozzarella cheese

For Garnishing
1 large onion and lettuce leaves
  1. Combine the mixed vegetables and boiled rajma well with boiled and mashed potatoes. Roll the corn tortillas with mashed potatoes mixture. Arrange them in a baking platter. Pour the salsa, mozzarella cheese and put grated processed cheese and bake it for 5-8 minutes.
  2. Garnish with chopped onion and shredded lettuce and serve immediately.
