Makes 4 serving
- Combine the mixed vegetables and boiled rajma well with boiled and mashed potatoes. Roll the corn tortillas with mashed potatoes mixture. Arrange them in a baking platter. Pour the salsa, mozzarella cheese and put grated processed cheese and bake it for 5-8 minutes.
- Garnish with chopped onion and shredded lettuce and serve immediately.
