A tasty and healthy preparation of mixed blanche vegetables in a sauce od various condiments and pineapple juice and cashewnuts.

  1. Soak cashewnuts in half cup of water for fifteen minutes.
  2. Drain and grind to a paste using the pineapple juice.
  3. Heat ghee in a pan.
  4. Add ginger paste, garlic paste, pepper powder and green chillies.
  5. Sauté for a minute. add pineapple and cashewnut paste, cinnamon powder, salt and blanched vegetables.
  6. Cook for two minutes.
  7. Serve hot garnished with chopped coriander.
