An awesome vegetable delight recipe with a medley of choicest vegetables stir fried together with select seasonings and then served hot with chopped coriander and cream as topping.

Ingredients
100 gms baby corn
100 gms baby onions
100 gms cherry tomatoes
100 gms green peas
200 gms grated potatoes
200 gms grated carrot
100 gms paneer (cottage cheese) strips
coconut milk extracted from one small coconut
2 tbsp cashewnuts (kaju)
1 cup milk
2 tsp cornflour
salt to taste

Grind To Paste The Following
3 of ginger (adrak)
8 flakes of garlic (lehsun)
6 green chillies
5 cloves (laung / lavang)
5 of cinnamon (dalchini)
2 tsp coriander (dhania) seeds
8 black peppercorns (kalimirch)
Method
    Method
  1. Heat 2 tablespoons oil in a pan, add the ground paste.
  2. Stir on a low heat till well-fried add all the vegetables, except tomatoes.
  3. Stir for 2 min. Add little water and cook the vegetables till they become little soft.
  4. Add salt and coconut milk, after2-4 boils pour corn flour paste [dissolve in 1 cup milk].
  5. Now add paneer strips and tomatoes and cashew nuts.
  6. Simmer it on low heat remove from heat when gravy becomes thick.
  7. Serve hot.
