Mixed vegetables cooked with spices, mashed and then shallow fried as vegetable patties/cutlets simply melt in the mouth. The vegetable patties are simple, easy to prepare in multitude of shapes and sizes and are typically served with coconut chutney.
- Boil all the vegetables and mash them well together
- Add the rest of the ingredients and mix them thoroughly.
- Take lime sized balls and shape them into oval shape patting them gently in between your palms.
- Roll them in the plain flour and immediately in the breadcrumbs and deep fry them in hot oil.
