Mixed vegetables cooked with spices, mashed and then shallow fried as vegetable patties/cutlets simply melt in the mouth. The vegetable patties are simple, easy to prepare in multitude of shapes and sizes and are typically served with coconut chutney.

Ingredients

1 large potato
handful of green peas
1/2 carrot, cubed into small pieces
1 onion, cubed into small pieces
small french bean cubes
a pinch of turmeric powder (haldi)
1 tsp cumin seeds (jeera) powder
1 tsp coriander (dhania) powder
1 tsp chilli powder
1/2 tsp garam masala
plain flour (maida) enough to roll the cutlets
bread crumbs enough to roll the cutlets
salt to taste
oil for deep-frying
Method


  1. Boil all the vegetables and mash them well together
  2. Add the rest of the ingredients and mix them thoroughly.
  3. Take lime sized balls and shape them into oval shape patting them gently in between your palms.
  4. Roll them in the plain flour and immediately in the breadcrumbs and deep fry them in hot oil.
