Vegetable Croquettes recipe - How to make Vegetable Croquettes

2 boiled , peeled and mashed potatoes
1 boiled , peeled and mashed beetroot
1 boiled peeled and mashed carrot
1 tsp chopped ginger (adrak)
2 tbsp peanuts
1 tsp finely chopped green chillies
1/4 cup besan (bengal gram flour)
2 tsp plain flour (maida)
bread crumbs
2 tbsp chopped coriander (dhania)
salt to taste
1 tsp black salt (sanchal)
oil for deep frying

To Be Mixed Together Into A Powder
2 tsp coriander (dhania) powder
2 tsp cumin seeds (jeera) powder
1 tsp garam masala
1 tsp freshly ground black pepper (kalimirch)
  1. Heat oil and fry the peanuts and keep them aside.
  2. Take the boiled vegetables and mash them together.
  3. Add chopped ginger, green chilli, coriander leaves, salt to taste and dry roasted masala into it.
  4. Add the fried peanuts. Mix them well and make a dough.
  5. Now heat little oil in a pan.
  6. After that stir the above mixture until it becomes dry in nature.
  7. Allow the mixture to cool and take a small part of mixture and give oval shape.
  8. In the mean time, take besan and maida along with little salt and make a comparatively thick batter.
  9. Now dip the croquettes and coat with bread crumb.
  10. Fry the bread crumb coated croquettes in oil and serve hot.
