Vaghareli Galka- Khichadi ( Ridge Gourd Khichdi) recipe - How to make Vaghareli Galka- Khichadi ( Ridge Gourd Khichdi)

Preparation Time:    Cooking Time:    Total Time:     Makes 3 to 4 servings

Ingredients
2 cups chopped ridge gourd (turai)
1/2 onion , chopped
1/2 potato , chopped
1/2 tomato , chopped
1/2 cup chopped french beans
1/2 carrot , sliced
1 tbsp chopped coriander (dhania)
1/2 cup sliced cabbage
2 green chillies , chopped
3 cups rice (chawal)
1/2 cup moong dal (split green gram)

For The Tempering
1 tbsp oil
1/2 tsp cumin seeds (jeera)
1/2 tsp asafoetida (hing)
3 to 4 peppercorns (kalimirch)
3 to 4 cloves (laung / lavang)
1 to 2 bay leaf
2 tbsp chopped garlic (lehsun)
1/2 tsp turmeric powder (haldi)
1 tsp chilli powder
salt to taste
Method
    Method
  1. Clean, wash and drain the dal and rice with enough water.
  2. Heat the oil in a pressure cooker and add the cumin seeds.
  3. When the seeds crackle, add the garlic and saute till garlic turns golden brown.
  4. Add the pepper, bay leaf, cloves and saute for 20 seconds.
  5. Add the asafoetida and saute for 10 seconds.
  6. Add the vegetables and saute for 2 minutes.
  7. Add the turmeric powder, chilli powder and salt and mix well.
  8. Add the rice and dal and mix well and add 6-8 cups water and mix well.
  9. Pressure cook for 2 whistles or till cooked.
  10. Allow the steam to escape before opening the lid.
  11. Serve hot.
