Ingredients

1 cup long grained rice (basmati rice)
4 to 5 tbsp ghee
2 to 3 bay leaves
3 cloves (laung / lavang)
3 to 4 cardamom
6 tomatoes ripe ones
2 onions
5 to 6 garlic flakes
1 inch ginger piece
5 red chillies
salt to taste
2 cups hot water
½ cup cashew nuts
Method

  1. 1. grind onion, tomatoes, ginger, garlic, cloves, cardamom, chillies into a fine paste.
  2. 2. wash and drain the rice. in a pan, add 2 tsp ghee, fry the rice, add bay leaves. when the rice gives out aroma, add the ground paste, hot water. add salt and cook till the grains are separate.
  3. 3. fry cashews in the remaining ghee in a pan and add to the rice.
  4. 4. serve hot with papad and raita. your tomato rice is ready to serve.
