Tomato Rice is a red colored tangy and delicious rice preparation with fresh tomato puree as the base. The sweet and tangy tomato flavor embodies the rice and tastes excellent when served with any vegetable or meat gravy.

Ingredients

2 cups soaked rice (chawal)
5 medium sized tomatoes , pureed
1 tsp mustard seeds ( rai / sarson)
1 tsp asafoetida (hing)
7 to 8 curry leaves (kadi patta)
1 1/2 tsp cumin seeds (jeera) powder
2 tsp crushed black pepper (kalimirch)
salt to taste
2 tbsp oil
coriander (dhania) leaves for garnishing
Method

  1. Heat oil in a pressure pan.
  2. Put mustard seeds, when spluttered add hing, curry leaves and soaked rice.
  3. Stir fry for a minute.
  4. Add tomato puree, cumin powder, pepper powder,salt and mix well.
  5. Close lid and pressure cook. (make 1 or 2 whistles only).
  6. When done, garnish with coriander and serve hot with papad.
