  1. Wash the rice well.
  2. Add 1.75 cups water, 1/4 tsp. oil, the turmeric and cook the rice (make sure it is fluffy and soft), spread on a platter and cool.
  3. Heat remaining oil along with the red chili, add mustard seeds and let it splutter.
  4. Add green chilies, ginger, garlic and onion and fry till onions are browned lightly.
  5. Add tomatoes and stir till tomatoes get soft and mushy.
  6. Add the powders, curry leaves and salt, stir to mix well.
  7. Add the rice and stir to mix evenly.
  8. Serve garnished with coriander leaves.
