An innovative tomato pudding recipe which is not appealing in looks and taste but also a better choice, health wise. The tomato pudding has the tomato puree baked with butter, bread and brown sugar as ingredients. A delicious pudding recipe with a crisp topping.

1 can tomato puree or 1 1/2 cup homemade fresh puree
1/2 cup boiling water
1/2 cup brown sugar
1/2 tsp salt
2 cups bread cut into 1-inch cubes
1/3 cup butter (unsalted) melted

  1. Add sugar and salt to purée.
  2. Add water; simmer 5 minutes.
  3. Add melted butter.
  4. Place bread in greased casserole; cover with tomato butter.
  5. Cover, or if extra crispiness is desired, bake uncovered at 350 degrees f for 30 minutes.
