An excellent homemade marmalade recipe, the Tomato & orange marmalade has the perfect combination of sweet tomatoes with tangy oranges. The dash of cinnamon, cloves, ginger and sugar add to the taste, texture and flavour of this melt in the mouth marmalade recipe.
- Place tomatoes and oranges in a large bowl.
- Measure mixture into a large non-reactive pot pan and add sugar. add cloves and cinnamon. cook over medium heat, stirring constantly, until sugar is dissolved. reduce heat slightly, and cook for 1 hour, stirring occasionally with a wooden spoon skimming off foam.
- Stir in ginger and cook 10 minutes longer. remove cloves and cinnamon. pour into hot jars and process for 10 minutes in a boiling water bath. adjust lids. makes 4 to 5 half-pint jars.
