Toasted veggie- which is a simple and versatile toasted bread recipe with a spicy cheesy vegetable as filling. Enjoy this toasted delight with green chutney or ketchup as evening snack item for school return children or packed lunch option.

Ingredients

4 slices of white sandwich bread
1 medium potato, boiled and coarsely mashed
1 small tomato, thinly sliced
some cucumber slices
1 tbsp fresh grated coconut
1 tbsp corn (makai ke dane)
1 tbsp grated cheese
1 1/2 tbsp coriander (dhania)
1 green chilli (more if u want spicy)
some butter to spread
salt and pepper to taste
Method


  1. Butter all the bread sloces, front and back.
  2. With a pestle, coarsely grind the coriander and green chilli.
  3. Add the ground paste, cheese and salt & pepper to the mashed potatoes.
  4. Add coconut and corn to the mixture.
  5. Now place some tomato slices on one slice and put some potato mixture, top with some slice cucumber and place the second slice of bread.
  6. Toast it in the sandwich maker till light brown.
  7. Serve with green chutney and tomato ketchup.
  8. Enjoy!!!!
