For The Spinach Dip (makes Approx 8 Tbsp)
1 tsp oil
1 1/2 tbsp chopped onions
1/2 tsp chopped green chillies
1 cup roughly chopped spinach (palak)
1/4 cup grated low-fat paneer (cottage cheese)
1/4 cup low-fat milk (99.7% fat-free , readily available in the market)
salt and to taste

Other Ingredients
4 whole wheat bread slices slices

For The Garnish
1 tbsp low-fat paneer(cottage cheese)
For the spinach dip

  1. Heat the oil in a broad non-stick pan, add the onions and green chillies and sauté on a medium flame till the onions turn translucent.
  2. Add the spinach and paneer and cook on a medium flame for 3 to 4 minutes, while stirring continuously.
  3. Add the milk and cook on a medium flame for another 2 minutes, while stirring continuously.
  4. Add the salt and pepper, mix well and keep aside to cool.
  5. Blend in a mixer to a smooth paste and keep aside.

How to proceed

  1. Just before serving, toast the whole wheat bread slices in a pop up toaster and cut each slice into 2 diagonally.
  2. Garnish the spinach dip with paneer and serve immediately with the bread triangles.

spinach dip, is so creamy, quick and simple to make. I tried this dip with nacho chips also. The vibrant green color is so visually appetizing.
