A shaahi drink in which mild spices romance with the almonds and milk resulting in a rich taste. Make the paste in advance and mix it with milk whenever hunger pangs strike on a fasting day.

Ingredients

To Blended Into A Thandai Paste
1/4 cup almonds (badam) , soaked , drained and peeled
2 tbsp fennel seeds (saunf)
10 to 12 peppercorns(kalimirch)
4 tsp poppy seeds (khus-khus)
2 pcs pinches cardamom (elaichi) powder
a few strands saffron (kesar) strands dissolved in 1 tbsp warm milk
1 tbsp rose water

Other Ingredients
5 cups milk
1/2 cup powdered sugar

For The Garnish
a few chopped rose petals
Method
  1. Bring the milk to boil in a broad non-stick pan and cool completely.
  2. Add the ground paste and mix well.
  3. Refrigerate for at least for 3 to 4 hours.
  4. Strain using a strainer, add the sugar and mix well.
  5. Serve chilled garnished with rose petals.

Recipe I tried and, if followed properly is one of the best drink, and my family members actually enjoyed and was in demand. Thanks mam for such beautiful recipes.

Too much of fennel...will not make it again

Tarla Dalal    Hi Megha, Thandai has a very dominant taste of fennel seeds, hence it is used in a little higher quantity. If you don''t like much dominant flavour of fennel seeds, you can reduce it in your paste. Do try this recipe once again and share your review with us.

Really a rich, tasty and refreshing shahi drink which becomes very easy to make with the help of this recipe. I tried it and enjoyed it . Thnks for the recipe!!
