Ingredients

For The Thai Curry Paste
8 to 10 whole dry red chillies
1/4 cup chopped onions
4 garlic (lehsun) flakes
1 tbsp grated ginger (adrak)
2 lemongrass (hare chai ki patti)
2 tbsp chopped coriander (dhania)
2 tbsp coriander (dhania)
1/2 tsp black peppercorns (kalimirch)
1/2 tsp cinnamon (dalchini) powder
2 tsp soy sauce
2 tsp fresh lemon juice
1 tbsp oil
1 tsp salt
1 tsp oil for cooking

Other Ingredients
2 cups chopped mixed vegetables (capsicum , broccoli ,
corn (makai ke dane) and mushrooms)
2 tbsp oil
2 cups coconut milk
1/2 cup chopped basil leaves
1/2 tsp soy sauce
1/2 tsp thai seasoning
1 tbsp cornflour dissolve in 1 tsp water
salt to taste
Method

For the Thai Curry Paste

  1. Soak the red chillies in warm water for 10 minutes.
  2. Transfer all the ingredients and the chillies in a blender, add little water and grind into a smooth paste.
  3. Heat the oil in non-stick pan, add the paste and saute for 5-8 minutes on a slow flame.
  4. Remove fro the flame and keep aside.

  1. Blanch all the vegetables and keep aside.
  2. Heat the oil in a non stick pan, add the thai curry paste and fry it for 3-4 minutes
  3. Add the basil leaves, saute for 2 minutes on a slow flame.
  4. Add half of the coconut milk, thai seasoning, soy sauce, salt, cooked vegetables and 1 cup water mix well.
  5. Cover the pan with the lid and simmer for 5-8 minutes.
  6. Add the cornflour paste to the remaining coconut milk, mix well.
  7. Add this mixture to the curry, mix well and bring to boil.
  8. Serve hot.
