Thai Noodles recipe - How to make Thai Noodles

Ingredients
200 gms flat rice noodles
1 cup blanched and sliced mixed vegetables
1/4 cup sliced red capsicum
1/4 cup sliced yellow capsicum
1 tbsp thyme
1 tbsp dried mixed herbs
3 tbsp coconut milk powder
2 tbsp olive oil
1 tbsp garlic (lehsun) paste
salt to taste

For The Garnish
roasted and peeled peanuts
chopped parsley or coriander (dhania)
Method
    Method
  1. Soak the rice noodles in hot water for 30 minutes.
  2. Heat the oil in a large pan, add garlic paste and saute till it is light golden in colour.
  3. Add the blanched vegetables and further saute for 3-4 minutes.
  4. Add Thai Seasoning and Mixed herbs, toss well.
  5. Add coconut powder, mix well and add salt it required.
  6. Add 1-2 tbspn of water if necessary.
  7. Add the soaked rice noodles to the mixture and stir it for few seconds.
  8. Garnish it with parsley or coriander and roasted peanuts. Serve hot.
