Tender Coconut and Spinach Soup recipe - How to make Tender Coconut and Spinach Soup

200 gms spinach (palak) , finely chopped
200 ml tender coconut puree
coconut water as required
1/4 cup boiled sweet corn kernels (makai ke dane)
2 tbsp finely chopped celery
4 tbsp finely chopped onions
1 tsp olive oil
1 stick cinnamon (dalchini)
2 cloves (laung / lavang)
2 tsp cumin seeds (jeera)
salt to taste
grated carrot for garnishing
  1. Heat the oil in a deep pan, add the cumin seeds, cloves and cinnamon.
  2. When the seeds crackle, add the celery and onions and saute for few minutes.
  3. Add the spinach, corn, coconut pulp and enough coconut water to adjust the consistency, mix well and bring to boil.
  4. Serve warm garnished with carrot.
