Makes 4 servings
- Pressure cook the beetroot along with tamarind, tomato puree, sambhar masala and toovar dal, till the beetroot turns soft.
- Heat the oil in a kadhai, add the mustard seeds and urad dal.
- When the seeds crackle, add the curry leaves and coconut and saute till it turns light brown.
- Add this fried coconut to the beetroot, whisk and simmer for 5 minutes.
- Serve hot.
