100 gms soft butter
25 gms fresh yeast
500 gms plain flour (maida)
200 ml milk
1 to 2 tbsp castor sugar
2tbsp whipping cream
1 tbsp salt
1 egg
1/2 egg to glaze

  1. Put the floor in a mixing bowl and make a well in the centre .crumble the yeast into the well and add milk and sugar .sprinkle a little flour on top and soak for 5 mins
  2. Add other ingredients and mix with a wooden spoon .knead until the dough seperates from the sides of the bowl. remove the dough, lift and knead, until smooth and elastic .return to the bowl , cover with a damp cloth and leave to rise in a warm place until it doubles .knock back the dough and knead it again cut in half and roll each piece to a long
  3. Heat oven to 220dc put a pan of water in the bottom of the oven glaze the loaf with beaten egg chill for 10 mins, then bake in the preheated oven for 30-40 mins .do not open the oven for the first 20 minutes .cool on a cake rack covered with adamp cloth to givee a shiny finish to the loaf.
