A Christmas special biscuit recipe, Swan biscuits take time to prepare but are well worth the effort. The swan shaped biscuits are made from a dough comprising of flour, butter, milk and sugar. These swan shaped biscuits make for excellent birthday snacks or canape bases.

Ingredients

1 1/2 cups plain flour (maida)
3/4 cup butter
1/2 cup powdered sugar
a pinch of baking powder
1/3 cup cold milk

FOR ICING
40 gms butter
1 cup icing sugar
2 tbsp fresh thick cream
1/2 tsp any flavoured essence
Method

  1. Sift flour and baking powder.
  2. Beat butter and sugar.
  3. Fold in flour.
  4. Add milk.
  5. Knead a hard dough and cover with damp cloth for about one hour.
  6. Knead again and bake 3 ortions for a swan,a round neck,a hollow body and 2 wings.
  7. Make into swan figure and make all portions.
  8. Bake till light brown at 180 degrees c.
  9. Beat icing sugar,cream and butter.
  10. Fill in the hollow body structure.
  11. Adjust neck and wings.
