A sweetened naan recipe, Sheermal is made from maida flour which has been leavened with yeast and then baked in a hot oven. Sheermal is a traditional Muslim flat bread recipe, common to Lucknowi or Pakistani cuisine.

1/2 cup chana dal (split Bengal gram)
1/4 cup Toover dal
1/4 cup moong dal (split green gram)
1 tbsp urad dal (split black lentils)
1 tsp chilli powder
1 tsp turmeric powder (haldi)
1 tsp coriander (dhania) powder
1 tsp cumin seeds (jeera)
1 tbsp ghee
1 large onion thinly sliced
2 tsp lemon juice
salt for seasoning
1 cup curd or sour cream
4 cups warm water

  1. Wash and soak all the dals together for 10 mins in warm water.
  2. Add a pinch of salt and pressure cook the dals for 8 minutes.
  3. In a kadia, heat the ghee for 20 seconds and add the cumin seeds.
  4. When they start to crackle add the onions.
  5. When the onions are tender, add the dals and mix well.
  6. Add coriander powder, red chilli powder and turmeric powder and let it cook for 5 mins on a slow flame.
  7. Remove from heat and add lemon juice.
  8. Adjust seasoning.
  9. Serve in a bowl with a dollop of curd or sour cream while it is hot.
