Low in calories but high in fibre, here's a salad with an unusual flavoursome dressing made of lemon,honey and ginger. Watermelon, pineapple, cucumber, papaya and sweet corn togeather made this a colourful dish. Vitamin a and c act as antioxidants and help in collagen synthesis, which assists post-pregnancy skin renewal.
- Refrigerate the dressing to chill.
- Combine the watermelon, pineapple, cucumber, papaya, corn and salt in a bowl and toss well. Refrigerate to chill.
- Just before serving, pour the chilled ginger dressing over the salad and toss gently. Serve immediately.
