Variation: instead of urad dal, use channa dal and instead of coriander leaves use tender fenugreek leaves or dill leaves.

  1. Clean, wash, soak dal for 15 minutes.
  2. Boil in 2 cups water, adding turmeric and salt in a kadhai.
  3. Heat ghee in a heavy saucepan.
  4. Add all spices, broken coarsely, and cumin seeds.
  5. Allow to splutter, add onions. stirfry till light brown.
  6. Add dal, lemon juice, masalas. stir gently.
  7. Take care not to mash up dal too much.
  8. Garnish with coriander.
  9. Serve hot with rice and kadhi, or paratha and a gravy vegetable
  10. You can also decorate before serving with slices of boiled eggs, slices of tomatoes or fried potatoes.
