Ingredients

18 to 20 small brinjals (baingan / eggplant)
For stuffing...
2 onions
1/2 coconut
a small bunch coriander (dhania)
50 gms peanuts
5 to 6 cashewnuts (kaju)
tamarind (imli) - lemon sized lump
1 tsp fennel seeds (saunf)
2 tsp sugar
salt to taste
a little tamarind (imli) pulp
Method


  1. Wash the brinjals.
  2. Slit each cross wise both ways.
  3. Grind all the ingredients for the stuffing with a little water.
  4. Stuff the slit brinjals with the stuffing.
  5. Heat a little oil in a non-stick pan and slowly place the stuffed brinjals in it.
  6. Pour some tamarind puree on it.
  7. Keep the flame to sim and close the pan with a lid and let the brinjals get roasted.
